How to Make Borscht

Borscht is a traditional Eastern European soup known for its colour and rich flavour. The recipe can vary across different regions, but it is tasty and perfect for a winter day.

What Ingredients Will I Need?

To make the soup you will need two medium beets, peeled and grated, one large onion, finely chopped, two grated carrots and one large diced potato. You will need half of a small cabbage, shredded, two chopped tomatoes and one chopped pepper. Mince two cloves of garlic and add one bay leaf, four cups of beef or vegetable stock, two tablespoons of tomato paste, two tablespoons of vegetable oil and two tablespoons of red wine vinegar or apple cider vinegar. Add salt and pepper to taste, and you can buy some sour cream and fresh dill for a garnish.

Grate the beets and carrots, finely chop the onion and dice the potatoes. Shred the cabbage, chop the tomatoes and dice the bell pepper. In a large pot, heat the vegetable oil. Add your onions and sauté until they become translucent. Add the beets and carrots to the pot. Cook for about five minutes. Add the potatoes and tomatoes and tomato paste to the pot.
